Beans are among the best source of plant-based protein. They are also rich in fibre, which moderate blood sugar levels and promote colon health. They are a good source of several vitamins and minerals, such as molybdenum, folate, iron, copper, manganese, potassium, and vitamin K1.
Mexican rice with beans is a complete healthy meal with balance of protein, carbs and fibre.
Ingredients:
Rice – 50 gms (½ cup)
Boiled Red Beans – 50 gms (½ cup)
Carrot, Green Peas, Corn – 1 cup
Tomato Puree – ½ cup
Chopped Onion – 1 medium
Fine Chopped Tomato – 1 small
Chopped Coriander – 2 tbsp
Fine Chopped Garlic – 1 tsp
Mexican Chilli Paste – 1 tsp
Black Pepper Powder – ¼ tsp
Salt to taste
Oil – 2 tsp
NOTE: You can also use brown rice and any other beans of your choice.
Method:
- Heat oil in a deep pan, sauté garlic, chopped onion, and carrot for two minutes.
- Add washed rice and sauté until the rice is toasted and golden.
- Now add Mexican chilli paste, tomato puree, fine chopped tomato and water.
- Bring to a boil and reduce the heat to medium.
- Add the spices like salt, pepper powder, corn, green peas, boiled beans, stir until combined, cover with a lid and cook till the rice is completely cooked.
- Remove from the flame and leave to sit aside for 10 minutes.
- Garnish with coriander and serve hot.
