Mushroom Sandwich

With their meat like texture, mushrooms are edible fungi that have a prominent place in our meals.  Mushrooms are low calorie and rich source of protein, fibre and antioxidants. They are also rich in antioxidant called selenium. They are also rich in B vitamins: riboflavin, niacin, and pantothenic acid.

Mushrooms are versatile and can be prepared in many ways. They can be added to soups, salads, sandwiches, wraps, etc. Here is an exciting and delicious recipe of mushroom sandwich.

 

Ingredients:

Chopped Mushrooms – ½ Cup

Whole Wheat Bread Slices – 2

Chopped Garlic – ½ Tsp

Chopped Spring Onions – 1/3 Cup

Chopped Onion – 1 small

Chopped Bell peppers (Optional) – 1/3 Cup

Oregano – ½ Tsp

Crushed Pepper – ½ Tsp

Grated Cheese (Optional) – ½ Cube

Oil – 1 Tsp

Butter – 1 Tsp

Salt as per Taste

 

 

Method:

  1. Heat oil in a pan, add chopped garlic and sauté till the raw smell of garlic goes away.
  2. Add chopped onions and cook till they turn translucent.
  3. Add chopped bell peppers and spring onions with greens and sauté a bit.
  4. Now add mushrooms and sauté till the mixture is dry as mushrooms tend to leave water.
  5. Add salt, pepper, oregano and chilli flakes to the mixture and mix properly.
  6. Set the mixture aside.
  7. Take 2 slices of bread, apply a little butter on each.
  8. Place a tablespoon of mushroom mixture on a slice of bread and spread evenly.
  9. Finally grate some cheese on the mixture and top it off with another bread slice.
  10. Brush some oil / butter over the surface of the bread and grill or toast it on a pan from both the sides till golden brown.
  11. Cut it into 2 triangular halves and serve hot.
