Egg Bean Omelette

No time to cook your meal and bored with the same old boiled egg or omelette? Let us try something more filling, flavourful, delicious and a totally new variation of your egg. This Egg Bean Omelette recipe is an easy to cook and very less time-consuming recipe. Egg and beans being a rich source of Protein in the diet and veggies adding on to a lot of fibre and vitamins and minerals makes it a high protein and fibre rich meal.

 

Ingredients:

Eggs – 2 Nos.

Oil – 1 Tsp

Boiled Beans – 50gms

Spinach – ¼ Cup

Onion – 1 Small

Salt, Pepper to Taste

Coriander Leaves – For Garnish

 

Note: You can add vegetable of your choice. Boiled beans can be replaced with sprouts if you like.

 

Method:

  1. Break 2 eggs in a bowl and whisk it with a fork.
  2. Add salt & pepper as per your taste.
  3. Take a pan, put on the flame and heat 1 tsp of oil in it.
  4. Add the eggs and cook on medium flame for 15-20 seconds just until the base starts to set.
  5. Now spread spinach leaves over the omelette, add onion and the boiled beans and let it cook for 2-3 mins.
  6. Once the omelette is cooked well from the inside as well, fold it to make a half and remove it on a serving plate.
  7. Garnish with coriander leaves and sprinkle seasonings if needed.
  8. Serve hot.
