Cauliflower Fried Rice

Cauliflower is a nutritious cruciferous vegetable. And so, eating cauliflower rice isn’t just low-carb but also healthy. It’s light, low-carb, nutritious, gluten-free, refined sugar-free, and easy. Cruciferous vegetables contain compounds called isothiocyanates tiny molecules with promising anti-cancer effects. Also, chopping up cruciferous veggies increases the amount of sulforaphane, a potent anti-cancer isothiocyanate, in the plant. Cauliflower rice is also a good source of vitamin C (important for immunity and skin health) and potassium (important for bone health and blood pressure).

Cauliflower fried rice is a low-carb recipe which is most preferred when on a low carb diet or a keto diet. It is easy to prepare, healthy, and tasty.

 

Ingredients:

Grated Cauliflower – 1 cup

Diced Capsicum – ½ cup

Crushed Garlic – 1 tsp

Grated Ginger – 1 tsp

Soy Sauce – 1 tsp

Chilli Sauce – 1 tsp

Salt to taste

Oil – 2 tbsp

 

Method:

  1. In a large heavy skillet or wok, heat oil over medium-high heat.
  2. Add riced cauliflower.
  3. Cook, stirring occasionally, until it begin to soften.
  4. Add ginger, garlic and capsicum and stir in till the vegetables are tender.
  5. Add soy sauce, chilli sauce, and salt to taste and mix well.

Serve hot.

 

Note: You can also make the recipe by adding egg, paneer, tofu, and chicken to improve the protein content.
