Cauliflower and Potato Vegetable

Spiced Potatoes with Cauliflower, this Aloo Gobi is packed with flavours, super comforting, vegan and simply the best Aloo Gobi you will ever have! Aloo Gobi (potatoes & cauliflower) is a popular Indian dish in which potatoes and cauliflower are cooked with onions, tomatoes and spices. This dish can be made in several ways; here is a no oil version. It has onions, tomatoes, ginger, and garlic and spices!

 

Ingredients:

Cauliflower – 1 Cup (100 gms)

Potato – 2 medium (100 gms)

Onion – 1 finely chopped

Tomato – 2 finely chopped

Ginger & Garlic Paste – 1 tbsp

Amchur Powder – 1 tsp

Garam Masala – 1tsp

Cumin & Coriander Powder – 1 tsp

Kasturi methi – 1 tsp

Haldi powder – ½ tsp

Red Chilli powder – ½ tsp

Salt to taste

Coriander for Garnishing

 

Method:

  1. Wash the Potato & Cauliflower.
  2. Parboil potato & cauliflower
  3. Peel the potato & dice it
  4. Heat a pan & add the finely chopped onion stir for 2 mins
  5. Add chopped tomatoes & cook for 3 mins
  6. Add ginger garlic paste & cook for 1 to 2 mins
  7. Now add all the powders (Haldi, Chilli powder, cumin-coriander powder)
  8. Add the parboiled potato & cauliflower, stir well
  9. Add garam masala, kasuri methi & salt to taste, cover the pan & let it cook for 3 to 5 mins
  10. Garnish with coriander & serve hot with rotis.
