Cabbage Fried Rice

In our lifestyle, fried rice or pulao are very nice and easy to prepare meal option that we generally lean on to. This Cabbage Fried Rice is a wholesome recipe with a perfect balance of all your macronutrients i.e. carbohydrate, protein and fibre coming from rice, chicken and loads of vegetables respectively added into it. Not just the macronutrients, but this recipe also has the richness of vitamins A, B6, C and K and potassium.

In this recipe of Cabbage Fried Rice, the mild sweetness of cabbage blends very well with the aroma of the spices and basmati rice.

 

Ingredients:

Basmati Rice (Cooked) – 1 Cup

Cabbage – ½ Cup

Capsicum (Chopped) – ¼ Cup

Carrot (Chopped) – ¼ Cup

Spring Onion (Chopped) – ¼ Cup

Boiled Chicken (Shredded) – 100gms

Whole Egg – 1 No.

Salt and Pepper – As Per Taste

 

Note: For Vegetarian Recipe, replace the Egg and Chicken with Paneer / Tofu.

 

Method:

  1. Rinse the cabbage in ice cold water for crispiness.
  2. Boil the chicken with salt and pepper (as per taste). Once done shred the chicken and keep it aside.
  3. In a pan, take 1 tsp of oil and add spring onion (keep the leaves aside), carrot, capsicum and cabbage stir fry for just 30- 45 seconds.
  4. Stir in the whole egg and add the shredded chicken to pan.
  5. Once the egg is cooked add rice to the pan.
  6. Mix well on a high flame and remove from the flame.
  7. Season with salt and pepper.
  8. Garnish with spring onion leaves and serve hot.
