Bajra Khichdi

Khichdi is a wholesome meal and most comfort food after a busy tiring day. It is mostly made up of rice with a different combination of dals and vegetables. Rajasthani’s mostly replace rice with millets and that’s where Bajra Khichdi comes from.

Bajra is a rich source of complex carbohydrates and also contains vitamins and minerals like Vitamin B, Magnesium, Phosphorous, Iron, and Zinc. Lentils are an excellent source of protein, vitamins, and minerals. Vegetables, on other hand, are a good source of fibre. Hence, bajra khichdi is a complete meal in itself that is healthy and keeps you full for a longer time as it is slowly digested.

 

Ingredients:

Whole Bajra Soaked Overnight – 50 gms (½ cup)

Moong dal Soaked – 50 gms (½ cup)

Chopped Onion – 1 small

Chopped Tomato – 1 small

Diced Carrot – ½ cup

Jeera – 1 Teaspoon

Asafoetida – ¼ teaspoon

Turmeric – ¼  teaspoon

Chilli powder – ½ teaspoon

Garam Masala – ½ teaspoon

Ghee – 1 teaspoon

Salt – as per taste

Coriander for garnishing

 

Method:

  1. Wash and soak the bajra overnight and dal for 20 minutes.
  2. In a cooker add ghee, jeera, asafoetida, turmeric, chilli powder, bajra, dal, chopped vegetables, garam masala, salt and water as required to cook the khichdi.
  3. Cover the lid and cook till 3-4 whistles.
  4. Open and mix well.
  5. Garnish with coriander and serve hot.
