Carrot Ginger Soup

Soups are known to be comfort foods and are preferred during cold seasons. They are rich source of fiber and are packed with a lot of nutrients. Carrot is a great source of beta carotene, an antioxidant that gets converted into Vitamin A that promotes good immune function.

Ginger contains active ingredient gingerol which possess anti-inflammatory and antioxidant properties. It also helps aid digestion. Overall carrot ginger soup is not only delicious and tasty but a nutritional powerhouse.

 

Ingredients:

Chopped Carrot – 1 Cup

Chopped Onion – 1 Small

Ginger – 2 tsp

Mixed Herbs – ½ teaspoon

Pepper – ½ teaspoon

Oil – 1 teaspoon

Salt – as per taste

Coriander / Mint for garnishing

 

Method:

  1. Heat a teaspoon of oil in a pressure cooker and sauté onion, chopped carrot and ginger till onion turns soft and translucent.
  2. Now add water and salt to taste.
  3. Close the lid and pressure cook for 2-3 whistles.
  4. Allow the ingredients in the pressure cooker to cool down a little.
  5. Transfer them to a blender and blend it until smooth in texture.
  6. Heat a pan, pour the blended soup mixture in the pan, and add water to adjust the consistency.
  7. Season the soup with mixed herbs, and pepper powder and stir well.
  8. Garnish with coriander and serve hot.
