Soya Quesadilla

Quesadilla is a Mexican recipe similar to Tacos. It consists of tortilla and a mix of spices with various fillings ranging from meat to healthy combinations. It is famous in the Northern Mexico and United States and is consumed across the world. Soya Quesadilla is a healthy version of normal quesadillas, which otherwise is calorically dense and high in fat.

Soya is a high biological value protein and a rich source of vitamin C & folate, thiamine, Calcium, iron, magnesium, phosphorous, potassium, Omega 3, antioxidants and insoluble fibre Low in saturated fat & cholesterol free. Made with soya flour, wheat flour, veggies and boiled rajma, this recipe is a proper combination of carbohydrate, protein and fibre which makes it a perfect meal.

 

Ingredients:

Whole Wheat Flour – 2 Tbsp

Soya Flour – ¾ Cup

Boiled Rajma – 1 Cup

Chopped Tomatoes – ¼ Cup

Chopped Onions – ¼ Cup

Chopped Capsicum – ¼ Cup

Chopped Carrots – ¼ Cup

Chopped Ginger – 2 Tsp

Chopped Garlic – 1 Tsp

Oregano – ¼ Tsp

Chili Flakes – ¼ Tsp

Grated Cheese – ½ Cube

Oil – 2 Tsp

Ketchup – 1 Tsp

Salt as per Taste

 

Method:

  1. Combine whole wheat flour, soya flour and salt in a bowl and knead it into a soft dough using enough water.
  2. Divide the dough into 2 equal portions and roll each one into thin circles to make rotis.
  3. Heat a non-stick pan on a high flame, place the roti and half cook it from both the sides.
  4. Heat 1 tsp oil in another pan, add ginger and garlic and sauté.
  5. Add chopped vegetables, boiled rajma and salt to taste and sauté.
  6. Now add oregano, chili flakes and ketchup, mix properly and keep the mixture aside.
  7. Take a roti and place a portion of stuffing on it and spread evenly.
  8. Sprinkle little cheese over it and place the 2nd roti over the filling and seal the ends with little water to avoid the spilling.
  9. Heat a non-stick pan place the quesadilla and cook it from both the sides using ½ tsp oil till it turns golden and crisp.
  10. Once done, cut it into wedges and serve hot
